I will be staying in Bruges for 3 nights then onto Honfleur for week. I am travelling in a car with a baby so we will have to stop a few times.
Any ideas for lovely little villages to stop?

If you are travelling with a baby, then my suggestion would be to use the most direct route - which is the Péage Motorway.
On the motorways, the stops are denoted by Aire de xxxxxx Some of them have restaurants and filling stations, some of them don%26#39;t. You will see the notation a few Kms before the stop.
They all have areas where you can walk about and have a picnic, they have clean bathrooms.
I personally would prefer to get there quickly and use the Péage, rather than go slowly and see the little villages.
